1 lb salmon fillet, skinless and boneless, cut into bite-sized cubes

1 ripe mango, peeled and diced

2 tablespoons honey

2 tablespoons soy sauce

1 tablespoon Sriracha (adjust to taste)

1 tablespoon lime juice

1 teaspoon garlic powder

1 tablespoon ginger, freshly grated

2 tablespoons olive oil

Salt and pepper to taste

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Prepare the Mango Glaze: In a blender or food processor, combine the diced mango, honey, soy sauce, Sriracha, lime juice, garlic powder, and ginger. Blend until smooth. Taste and adjust the spice level by adding more Sriracha if desired.

    Marinate the Salmon: In a medium bowl, toss the salmon cubes with a pinch of salt, pepper, and 2 tablespoons of the mango glaze (reserve the rest for later). Allow the marinated salmon to sit for about 15-20 minutes to absorb the flavors.

      Cook the Salmon Bites: Heat the olive oil in a non-stick skillet over medium-high heat. Once hot, add the marinated salmon cubes in a single layer. Cook for about 2-3 minutes on each side, or until golden brown and cooked through.

        Glaze the Salmon: Pour the reserved mango glaze over the cooked salmon bites in the skillet, gently tossing to coat each piece. Let it cook for an additional minute, allowing the glaze to caramelize slightly.
