Spicy Roasted Chickpea Wraps

1 can (15 oz) chickpeas, drained and rinsed

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon ground cumin

½ teaspoon cayenne pepper (adjust for spice level)

Salt and pepper, to taste

4 whole wheat tortillas or wraps

1 cup fresh spinach leaves

1 large avocado, sliced

½ cup cherry tomatoes, halved

¼ cup pickled red onions (optional)

½ cup Greek yogurt or vegan dressing (optional)

Fresh cilantro, for garnish

Instructions
 

Preheat Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

    Prepare Chickpeas: In a mixing bowl, add the drained chickpeas. Drizzle with olive oil, and sprinkle with smoked paprika, cumin, cayenne pepper, salt, and pepper. Toss well to coat evenly.

      Roast Chickpeas: Spread the seasoned chickpeas out on the prepared baking sheet in a single layer. Roast in the preheated oven for 20-25 minutes or until they are crispy, shaking the pan halfway through for even cooking.

        Warm Tortillas: While the chickpeas are roasting, warm the tortillas in a skillet over medium heat or microwave them for about 10-15 seconds until pliable.

          Assemble Wraps: Once the chickpeas are ready, place a layer of fresh spinach on each tortilla. Top with slices of avocado, cherry tomatoes, pickled red onions, and a generous scoop of the crispy chickpeas.
