Instructions

Marinate the Shrimp: In a large bowl, combine the olive oil, smoked paprika, cumin, cayenne pepper, minced garlic, lime juice, salt, and pepper. Add the shrimp, tossing to coat. Cover and marinate in the refrigerator for at least 15 minutes.

Prepare the Mango Slaw: In another bowl, mix together the red cabbage, green cabbage, diced mango, red onion, jalapeño, and cilantro. In a small bowl, whisk together the lime juice, honey, salt, and pepper. Pour the dressing over the slaw mixture and toss well to combine. Set aside to let the flavors meld.

Cook the Shrimp: Heat a skillet over medium-high heat. Once hot, add the marinated shrimp in a single layer. Cook for about 2-3 minutes on each side, or until they turn pink and are cooked through. Remove from heat.

Warm the Tortillas: Briefly heat the tortillas on a dry skillet or grill for about 30 seconds on each side until they are soft and warm.

Assemble the Tacos: Lay a few shrimp on each tortilla, followed by a generous spoonful of the mango slaw. Drizzle with additional lime juice if desired.

Serve: Garnish with lime wedges on the side, allowing everyone to add a dash of extra lime juice.
