Spicy Sriracha Tuna Melt Quesadillas

2 cans (5 oz each) of tuna, drained

1/2 cup mayonnaise

2-3 tablespoons Sriracha (adjust to taste)

1 cup shredded cheddar cheese

1/2 cup diced red onion

1/4 cup chopped fresh cilantro

4 large tortillas (flour or whole wheat)

2 tablespoons olive oil

Salt and pepper to taste

Optional: sliced jalapeños for extra heat

Instructions
 

Prepare the Tuna Mixture:

    - In a medium bowl, combine the drained tuna, mayonnaise, Sriracha, diced red onion, and chopped cilantro. Mix well until all ingredients are evenly incorporated. Season with salt and pepper to taste. If you like extra heat, you can mix in sliced jalapeños as well.

      Assemble the Quesadillas:

        - Lay one tortilla on a flat surface. Spread half of the tuna mixture evenly over the tortilla, leaving a small border around the edges. Sprinkle half of the shredded cheddar cheese on top of the tuna mixture. Place another tortilla on top to form a quesadilla.

          - Repeat the process to make a second quesadilla.

            Cook the Quesadillas:

              - Heat 1 tablespoon of olive oil in a large skillet over medium heat. Carefully place one quesadilla into the skillet and cook for about 3-4 minutes or until the bottom is golden brown and crispy. Flip the quesadilla and cook for an additional 3-4 minutes until the other side is also golden and the cheese is melted.

                - Remove from the skillet to a cutting board and repeat with the second quesadilla, adding more olive oil if necessary.

                  Serve:

                    - Once both quesadillas are cooked, let them cool for a minute before slicing them into quarters. Serve warm with additional Sriracha, sour cream, or guacamole on the side for dipping.
