1 red bell pepper, finely diced

1 head of butter lettuce or romaine, separated into leaves

1/2 cup creamy peanut butter

1/4 cup soy sauce

2 tbsp honey

2 tbsp rice vinegar

1 tbsp sesame oil

1-2 tbsp sriracha (adjust to spice preference)

1 tsp lime juice

1 tbsp water (to thin, if needed)
