Ingredients

1 sheet of puff pastry (thawed)

2 cups fresh spinach, washed and chopped

1 cup mozzarella cheese, shredded

1/4 cup ricotta cheese

2 cloves garlic, minced

1/4 teaspoon nutmeg

Salt and pepper to taste

1 egg, beaten (for egg wash)

1 tablespoon olive oil

Optional: 1/4 cup grated Parmesan cheese

Sesame seeds (for garnish)

Instructions

Preheat the Oven: Begin by preheating your oven to 400°F (200°C).

Sauté the Spinach: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant. Then, add the chopped spinach and cook until wilted. Remove from heat, season with salt, pepper, and nutmeg, and allow it to cool slightly.

Mix the Filling: In a mixing bowl, combine the sautéed spinach, mozzarella cheese, ricotta cheese, and optional Parmesan cheese. Stir well until all ingredients are evenly mixed.

Prepare the Puff Pastry: On a lightly floured surface, roll out the thawed puff pastry sheet to enhance its thickness and flakiness. Cut the sheet into 3-inch squares.

Fill the Pastry Squares: Place about a tablespoon of the spinach and cheese filling at the center of each pastry square. Be careful not to overfill, as this may cause leakage during baking.

Seal the Puffs: Fold each square into a triangle, pressing the edges firmly to seal. You can use a fork to crimp the edges for a decorative touch.

Apply Egg Wash: Transfer the filled puff pastries onto a baking sheet lined with parchment paper. Brush the tops with the beaten egg to give them a golden-brown color while baking. Sprinkle sesame seeds on top for extra crunch.

Bake: Place the baking sheet in the preheated oven and bake for 18-20 minutes or until the pastries are puffed and golden brown.

Cool and Serve: Remove the spinach mozzarella puff pastry bites from the oven and let them cool for a few minutes. Serve warm as an appetizer or snack.
