4 cups fresh baby spinach, washed and dried

2 cups fresh strawberries, hulled and sliced

1/2 cup crumbled feta cheese

1/4 cup sliced almonds, toasted

1/4 cup poppy seeds

1/2 cup olive oil

1/4 cup apple cider vinegar

2 tablespoons honey (or maple syrup for a vegan option)

Salt and pepper to taste

Instructions
 

Prepare the Dressing: In a medium bowl, whisk together the olive oil, apple cider vinegar, honey, poppy seeds, salt, and pepper until well combined. Taste and adjust seasoning if necessary. Set the dressing aside.
