8 chicken drumsticks, skin-on

1/4 cup honey

1/4 cup soy sauce

4 cloves garlic, minced

1 tablespoon fresh ginger, grated

1 tablespoon apple cider vinegar

1 teaspoon sesame oil

1 teaspoon ground black pepper

1 teaspoon salt

1/2 teaspoon red pepper flakes (optional for heat)

1 cup baby carrots

2 cups baby potatoes, halved

1 tablespoon olive oil

1 tablespoon sesame seeds (for garnish)

Fresh cilantro or green onions (for garnish)

Preheat the Oven: Begin by preheating your oven to 200°C (400°F).

    Prepare the Marinade: In a bowl, combine honey, soy sauce, minced garlic, grated ginger, apple cider vinegar, sesame oil, black pepper, salt, and red pepper flakes if using. Whisk until thoroughly mixed.

      Marinate the Drumsticks: Place the chicken drumsticks in a large zip-lock bag or a bowl and pour the marinade over them. Seal the bag or cover the bowl, then refrigerate for at least 30 minutes (or up to overnight for deeper flavor).

        Prepare the Vegetables: In a large mixing bowl, toss together the baby carrots and halved baby potatoes with olive oil, salt, and a sprinkle of pepper. Set aside.

          Assemble the Traybake: Arrange the marinated drumsticks in the center of a large baking tray. Surround them with the seasoned carrots and potatoes, spreading them out evenly.

            Bake: Pour any remaining marinade over the drumsticks and vegetables. Bake in the preheated oven for 40-45 minutes, turning the drumsticks halfway through, until the chicken is cooked through and crispy, and the veggies are tender.
