Ingredients

10 chicken drumsticks

1/2 cup pure maple syrup

1/4 cup Dijon mustard

2 tablespoons soy sauce (or tamari for gluten-free)

2 tablespoons apple cider vinegar

2 cloves garlic, minced

1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried)

1 teaspoon smoked paprika

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions

Prep the Marinade: In a medium bowl, whisk together the maple syrup, Dijon mustard, soy sauce, apple cider vinegar, minced garlic, rosemary, smoked paprika, salt, and pepper until well combined.

Marinate the Drumsticks: Place the chicken drumsticks in a large resealable plastic bag or a shallow dish. Pour the marinade over the drumsticks, ensuring they are evenly coated. Seal the bag or cover the dish and refrigerate for at least 1 hour (or up to overnight for better flavor).

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with aluminum foil for easier cleanup and place a wire rack on top. This will allow the air to circulate around the chicken for even cooking.

Bake the Chicken: Remove the drumsticks from the marinade, allowing any excess to drip off, and arrange them on the wire rack. Bake the drumsticks in the preheated oven for 30 minutes.

Glaze the Drumsticks: After 30 minutes, brush the drumsticks with the reserved marinade (make sure it's the marinade that hasn’t touched raw chicken). Continue to bake for an additional 15 minutes, or until the chicken is cooked through and the skin is caramelized and sticky.

Finishing Touches: For an extra crispy finish, you can broil the drumsticks for an additional 2-3 minutes, watching closely to avoid burning.

Serve: Remove the chicken from the oven, let it rest for a few minutes, then garnish with freshly chopped parsley before serving.
