Ingredients
  

1 cup couscous

1 ¼ cups vegetable broth (or water)

1 cup fresh strawberries, hulled and sliced

½ cup feta cheese, crumbled

¼ cup walnuts, chopped

¼ cup red onion, finely chopped

¼ cup fresh basil leaves, chopped

1 tablespoon olive oil

1 tablespoon balsamic vinegar

1 tablespoon honey (or maple syrup)

Salt and pepper, to taste

Instructions
 

Prepare Couscous:

    - In a medium saucepan, bring the vegetable broth (or water) to a boil.

      - Once boiling, remove from heat and stir in the couscous. Cover and let it sit for about 5 minutes, or until the liquid is absorbed. Fluff with a fork.

        Toast the Walnuts:

          - In a dry skillet over medium heat, add the chopped walnuts and toast them for about 4-5 minutes, stirring often until they are golden and fragrant. Remove from heat and let cool.

            Mix the Dressing:

              - In a small bowl, whisk together the olive oil, balsamic vinegar, honey, and a pinch of salt and pepper until well combined. Taste and adjust seasoning if needed.

                Combine the Ingredients:

                  - In a large mixing bowl, combine the fluffed couscous, sliced strawberries, crumbled feta cheese, toasted walnuts, red onion, and chopped basil.

                    Dress the Couscous:

                      - Pour the prepared dressing over the couscous mixture and gently toss until everything is evenly coated and combined.

                        Chill & Serve:

                          - Let the salad sit at room temperature for about 10 minutes before serving, or refrigerate for up to an hour to allow the flavors to meld. Serve chilled or at room temperature.
