Ingredients

1 cup couscous

1 cup vegetable broth (or water)

1 cup fresh strawberries, hulled and sliced

1/2 cup crumbled feta cheese

1/4 cup fresh mint leaves, chopped

1/4 cup slivered almonds, toasted

2 tablespoons honey

2 tablespoons balsamic vinegar

3 tablespoons olive oil

Salt and pepper, to taste

Instructions

Cook the Couscous: In a medium saucepan, bring the vegetable broth or water to a boil. Stir in the couscous, cover, and remove from heat. Let it sit for about 5 minutes until the couscous absorbs the liquid. Fluff it with a fork and let it cool.

Prepare the Dressing: In a small bowl, whisk together the honey, balsamic vinegar, and olive oil. Season with salt and pepper to taste.

Mix the Salad: In a large mixing bowl, combine the cooled couscous, sliced strawberries, crumbled feta cheese, chopped mint, and toasted slivered almonds.

Add the Dressing: Drizzle the prepared dressing over the couscous mixture. Gently toss everything together until well combined, ensuring the strawberries and feta are evenly distributed.

Adjust & Serve: Taste the salad and adjust the seasoning if necessary. For an extra touch, garnish with additional mint leaves or a sprinkle of feta on top.

Chill & Enjoy: Let the salad sit in the refrigerator for at least 30 minutes before serving to allow the flavors to meld together. Serve chilled or at room temperature.
