Strawberry Glazed Turkey

1 whole turkey (12-14 pounds)

1 cup fresh strawberries, pureed

1/2 cup strawberry jam

1/4 cup honey

1/4 cup soy sauce

2 tablespoons Dijon mustard

1 tablespoon apple cider vinegar

1 tablespoon fresh rosemary, chopped

1 tablespoon fresh thyme, chopped

4 cloves garlic, minced

Salt and pepper, to taste

Olive oil, for rubbing

Fresh strawberries, sliced (for garnish)

Instructions
 

Prepare the Turkey: Rinse the turkey under cold water and pat dry. Remove the giblets and neck from the cavity. Rub the turkey generously with olive oil, and season inside and out with salt and pepper.

    Make Strawberry Glaze: In a medium saucepan over medium heat, combine the pureed strawberries, strawberry jam, honey, soy sauce, Dijon mustard, apple cider vinegar, minced garlic, rosemary, and thyme. Bring to a simmer, stirring occasionally, and let it cook for about 10 minutes until the glaze thickens slightly. Remove from heat and set aside.

      Preheat Oven: Preheat your oven to 325°F (165°C).

        Apply Glaze: Place the turkey in a roasting pan. Brush about half of the strawberry glaze all over the turkey, making sure to get into the crevices and under the skin where possible.

          Roasting: Tent the turkey with aluminum foil (to prevent over-browning) and roast in the preheated oven. Calculate approximately 13-15 minutes of cooking time per pound. For a 12-pound turkey, this is roughly 2.5 to 3 hours.

            Baste: After the first hour of cooking, remove the foil and baste the turkey with the drippings and remaining glaze every 30 minutes until the turkey reaches an internal temperature of 165°F (75°C) at the thickest part of the thigh.

              Resting: Once cooked, remove the turkey from the oven. Let it rest for at least 20-30 minutes before carving to allow the juices to redistribute.

                Serve: Garnish the sliced turkey with fresh strawberry slices, and drizzle any remaining glaze over the top for a vibrant presentation.
