2 pints fresh strawberries, hulled and sliced

1/4 cup granulated sugar (for strawberries)

1 cup heavy whipping cream

8 oz cream cheese, softened

1/2 cup powdered sugar

1 tsp vanilla extract

1 package (14 oz) store-bought ladyfinger cookies (or sponge cake)

Fresh mint leaves for garnish (optional)

Instructions
 

Prepare Strawberries: In a medium bowl, combine the sliced strawberries with granulated sugar. Toss well and let them sit for about 15-20 minutes, allowing them to release their juices.

    Make Whipped Cream Mixture: In a mixing bowl, whip the heavy cream until soft peaks form. In another bowl, blend the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy. Gently fold the whipped cream into the cream cheese mixture, being careful not to deflate the whipped cream.

      Layer the Cake: In a 9x13 inch baking dish, start by laying down a single layer of ladyfinger cookies or sponge cake at the bottom. If using sponge cake, cut it to fit. Spoon half of the strawberry mixture (including the juice) over the cookies.

        Add Cream Layer: Spread half of the cream cheese mixture over the strawberries, smoothing it out evenly.

          Repeat Layers: Add another layer of ladyfingers or sponge cake, followed by the remaining strawberries and their juices. Top with the remaining cream cheese mixture, spreading it out to cover everything.

            Chill and Serve: Cover the baking dish with plastic wrap and refrigerate for at least 4 hours, or preferably overnight. This allows the flavors to meld and the ladyfingers to soften.

              Garnish: Before serving, give it a light dusting of powdered sugar and garnish with fresh mint leaves for a beautiful presentation.
