2 ripe avocados

1 can (5 oz) tuna in olive oil, drained

2 tablespoons mayonnaise (or Greek yogurt for a lighter option)

1 tablespoon Dijon mustard

2 tablespoons red onion, finely chopped

1 tablespoon celery, minced

1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)

1 tablespoon capers, rinsed and chopped (optional)

Juice of 1 lemon

Salt and pepper, to taste

Cherry tomatoes, halved (for garnish)

Lettuce leaves (for serving)

Instructions
 

Prepare the Avocados: Cut the avocados in half lengthwise and carefully remove the pit. Scoop out a small portion of the avocado flesh from each half to create more space for the filling. Keep the scooped-out avocado in a small bowl.

    Make the Tuna Filling: In a medium mixing bowl, combine the drained tuna, mayonnaise, Dijon mustard, red onion, celery, fresh dill, capers (if using), and the juice of half the lemon. Mix until well combined. If you like, add the scooped-out avocado into the mixture for added creaminess. Season with salt and pepper to taste.

      Fill the Avocados: Generously spoon the tuna mixture back into each avocado half, packing it in tightly.

        Garnish: Top each stuffed avocado with a sprinkle of additional dill, and a few halved cherry tomatoes for a pop of color.

          Serve: Arrange the stuffed avocado boats on a bed of lettuce leaves on a serving platter. Drizzle with a bit more lemon juice if desired.
