Stuffed Sweet Potatoes with BBQ Chicken

4 medium sweet potatoes

2 cups cooked shredded chicken (rotisserie chicken works great)

1 cup BBQ sauce (your favorite brand or homemade)

1/2 cup corn (canned or frozen)

1/2 cup black beans, rinsed and drained

1/2 red onion, finely diced

1 cup shredded cheddar cheese

1/4 cup chopped fresh cilantro (optional)

Salt and pepper to taste

Olive oil for drizzling

1 teaspoon smoked paprika

Sour cream for serving (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Sweet Potatoes: Wash the sweet potatoes thoroughly, poke them several times with a fork to allow steam to escape, and drizzle them lightly with olive oil. Sprinkle with salt and pepper. Place the sweet potatoes on a baking sheet and roast in the preheated oven for 45-60 minutes or until they are tender when pierced with a fork.

      Cook the Filling: In a mixing bowl, combine the cooked shredded chicken, BBQ sauce, corn, black beans, diced red onion, smoked paprika, and salt/pepper. Mix well until all ingredients are evenly coated with BBQ sauce.

        Stuff the Sweet Potatoes: Once the sweet potatoes are done, remove them from the oven and allow them to cool slightly. Cut each sweet potato in half lengthwise and gently scoop out some of the flesh to create a pocket for the filling. Be careful not to tear the skins.

          Assemble: Fill each sweet potato half with the BBQ chicken mixture. Top each stuffed sweet potato with shredded cheddar cheese.

            Melt the Cheese: Return the stuffed sweet potatoes to the oven for an additional 10-15 minutes, or until the cheese is melted and bubbly.

              Garnish and Serve: Remove from the oven and allow to cool slightly. Garnish with fresh cilantro and a dollop of sour cream, if desired. Serve warm and enjoy the delicious smoky flavors!
