Summer Veggie Gnocchi

1 lb (450g) fresh gnocchi (store-bought or homemade)

2 tbsp olive oil

1 small zucchini, diced

1 medium yellow squash, diced

1 cup cherry tomatoes, halved

1 bell pepper (red or yellow), diced

1 cup fresh spinach, roughly chopped

2 cloves garlic, minced

½ tsp red pepper flakes (optional)

Salt and pepper, to taste

¼ cup fresh basil, torn into pieces

Grated Parmesan cheese for serving (optional)

Instructions
 

Cook the Gnocchi: In a large pot of salted boiling water, add the gnocchi. Cook according to package instructions until they float (usually about 2-3 minutes for fresh gnocchi). Once cooked, use a slotted spoon to transfer them to a plate. Reserve ½ cup of the cooking water.

    Sauté the Vegetables: In a large skillet over medium heat, heat the olive oil. Add the minced garlic and sauté for about 30 seconds until fragrant. Then, add the diced zucchini, yellow squash, and bell pepper. Sauté for 5-7 minutes, stirring occasionally, until the vegetables are tender but still crisp.

      Add Cherry Tomatoes and Spinach: Stir in the halved cherry tomatoes and chopped spinach. Cook for another 3-4 minutes until the tomatoes soften and the spinach wilts.

        Combine Gnocchi and Vegetables: Add the cooked gnocchi to the skillet with the sautéed vegetables. Gently toss to combine, adding reserved cooking water a little at a time if needed to create a light sauce. Season with red pepper flakes, salt, and pepper to taste.

          Finish and Serve: Remove the skillet from heat. Stir in the fresh basil and toss everything together. Serve the gnocchi hot, garnished with grated Parmesan cheese if desired.
