Summer Veggie Gnocchi

1 pound potato gnocchi

1 cup cherry tomatoes, halved

1 medium zucchini, diced

1 yellow bell pepper, diced

1 cup sweet corn (fresh or frozen)

2 cloves garlic, minced

3 tablespoons olive oil

1 teaspoon balsamic vinegar

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

Salt and pepper to taste

¼ cup fresh basil, chopped (for garnish)

Grated Parmesan cheese (optional, for serving)

Instructions
 

Cook the Gnocchi: In a large pot of salted boiling water, add the potato gnocchi. Cook according to package instructions, usually about 2-3 minutes until they float to the surface. Drain and set aside.

    Sauté the Veggies: In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 30 seconds until fragrant. Be careful not to let it burn.

      Add the Vegetables: Add diced zucchini, yellow bell pepper, and sweet corn to the skillet. Sauté for about 5-7 minutes, stirring occasionally, until the vegetables are tender yet crisp.

        Add Tomatoes and Seasoning: Stir in the halved cherry tomatoes and thyme. Cook for an additional 2-3 minutes until the tomatoes start to soften. Drizzle balsamic vinegar over the mixture and season with salt and pepper to taste.

          Combine with Gnocchi: Gently fold the cooked gnocchi into the vegetable mixture, ensuring they're well-coated with the sauce and vegetables. Cook for another 2 minutes, just enough to heat everything through.
