1 cup quinoa (dry)

2 cups water or vegetable broth

1 cup fresh strawberries, hulled and sliced

1/2 cup cucumber, diced

1/4 cup red onion, finely chopped

1/4 cup feta cheese, crumbled (optional)

1/4 cup almonds, slivered or chopped

1/4 cup fresh mint leaves, chopped

For the Dressing:

1/4 cup olive oil

2 tablespoons apple cider vinegar

2 tablespoons honey (or agave syrup for a vegan option)

1 teaspoon Dijon mustard

Salt and pepper, to taste

Cook the Quinoa: Rinse the quinoa under cold water to remove bitterness. In a medium saucepan, combine the quinoa and water (or broth). Bring to a boil, then reduce the heat to low, cover, and simmer for about 15 minutes or until the quinoa is fluffy and the liquid is absorbed. Remove from heat and let it cool.
