Ingredients

2 cups rolled oats

1 ½ cups almond milk (or any milk of choice)

1 medium apple, peeled, cored, and diced (preferably a sweet variety like Fuji or Honeycrisp)

¼ cup maple syrup (or honey)

½ teaspoon vanilla extract

1 teaspoon cinnamon

¼ teaspoon nutmeg

½ teaspoon baking powder

¼ teaspoon salt

½ cup chopped nuts (walnuts or pecans work well)

½ cup raisins or dried cranberries (optional)

¼ cup almond butter (or any nut butter) for drizzling on top

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease an 8x8 inch square baking pan or line it with parchment paper for easy removal.

Combine Wet Ingredients: In a large mixing bowl, combine the almond milk, maple syrup, vanilla extract, and diced apple. Stir well to mix all the ingredients.

Mix Dry Ingredients: In a separate bowl, combine the rolled oats, cinnamon, nutmeg, baking powder, and salt. Mix until evenly combined.

Combine Mixtures: Pour the dry oat mixture into the wet apple mixture. Stir until the oats are fully coated and everything is well combined. If using, fold in the chopped nuts and raisins or dried cranberries at this stage.

Pour into Baking Dish: Transfer the mixture to the prepared baking pan and spread it evenly. Gently press down to ensure it holds together while baking.

Bake: Place the pan in the preheated oven and bake for 25-30 minutes, or until the top is golden brown and firm to the touch.

Cool and Slice: Once baked, remove from the oven and allow to cool in the pan for about 10-15 minutes. Use a sharp knife to cut into squares.

Serve: Drizzle each square with almond butter before serving, if desired. Enjoy warm or at room temperature!
