Ingredients

2 ripe bananas, mashed

1 cup rolled oats

1 cup milk (dairy or non-dairy)

1/4 cup honey or maple syrup

1/4 cup peanut butter or almond butter

1 teaspoon vanilla extract

1 teaspoon baking powder

1/2 teaspoon cinnamon

1/4 teaspoon salt

1/2 cup mix-ins (chocolate chips, nuts, dried fruits, or fresh berries)

Instructions

Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners or lightly grease it.

In a large mixing bowl, combine the mashed bananas, rolled oats, milk, honey (or maple syrup), peanut butter, and vanilla extract. Mix well until all the ingredients are thoroughly combined.

Add in the baking powder, cinnamon, and salt, stirring until they are fully incorporated into the mixture.

Gently fold in your desired mix-ins such as chocolate chips, nuts, dried fruits, or fresh berries. This step is highly customizable; use what you enjoy most!

Spoon the mixture evenly into the prepared muffin tin, filling each cup about 3/4 full.

Bake in the preheated oven for 20-25 minutes, or until the tops are golden and a toothpick inserted into the center comes out clean.

Allow the oatmeal cups to cool in the pan for 5 minutes, then transfer them to a wire rack to cool completely.

Serve warm or store in an airtight container in the fridge for up to a week. Enjoy your delicious Sweet Baked Banana Oatmeal Cups as a healthy breakfast or snack!
