2 ripe bananas, mashed

1 cup rolled oats

1/2 cup almond butter (or any nut butter)

1/4 cup honey or maple syrup

1/2 cup unsweetened applesauce

1 tsp vanilla extract

1/2 tsp cinnamon

1/4 tsp salt

1/2 cup chopped nuts (walnuts or almonds)

1/2 cup dark chocolate chips (optional)

Instructions
 

Preheat your oven to 350°F (175°C) and line an 8x8 inch baking pan with parchment paper, leaving some overhang for easy removal.

    In a large mixing bowl, combine the mashed bananas, almond butter, honey (or maple syrup), applesauce, and vanilla extract. Mix until smooth and well combined.

      In a separate bowl, mix together the rolled oats, cinnamon, and salt.

        Gradually add the dry ingredients to the wet mixture, stirring until just combined. Fold in the chopped nuts and chocolate chips, if using.

          Pour the mixture into the prepared baking pan, spreading it evenly and pressing it down firmly.

            Bake in the preheated oven for 20-25 minutes or until the edges are golden brown and a toothpick inserted in the middle comes out clean.

              Remove from the oven and let it cool in the pan for about 10 minutes. Then lift it out using the parchment paper and let it cool completely on a wire rack before cutting into bars.

                Store in an airtight container at room temperature for up to a week or refrigerate for longer storage.
