2 ripe bananas, mashed

1 cup rolled oats

1/2 cup almond butter (or any nut butter of your choice)

1/4 cup honey or maple syrup

1/2 teaspoon vanilla extract

1/2 teaspoon baking powder

1/2 teaspoon cinnamon

1/4 teaspoon salt

1/4 cup dark chocolate chips (optional)

1/4 cup chopped nuts or seeds (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and line an 8x8 inch baking pan with parchment paper, leaving some overhang for easy removal later.

    Mix Wet Ingredients: In a large mixing bowl, mash the ripe bananas until smooth. Add almond butter, honey (or maple syrup), and vanilla extract. Mix until well combined.

      Combine Dry Ingredients: In a separate bowl, whisk together the rolled oats, baking powder, cinnamon, and salt.

        Combine Mixtures: Gradually add the dry mixture to the wet ingredients, stirring until everything is well combined. If using, fold in the dark chocolate chips and nuts/seeds at this stage.

          Pour and Spread: Pour the batter into the prepared baking pan and use a spatula to evenly spread the mixture into the corners of the pan.

            Bake: Place in the preheated oven and bake for about 20-25 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.

              Cool & Cut: Once done, remove from the oven and let it cool in the pan for 10 minutes. Using the parchment overhang, lift the bars out and place them on a cooling rack to cool completely before cutting them into squares.
