1 lb (450g) ground chicken

1 tablespoon vegetable oil

2 cloves garlic, minced

1 tablespoon fresh ginger, minced

1 red bell pepper, finely diced

1 cup chopped mushrooms (shiitake or button)

¼ cup green onions, sliced

¼ cup water chestnuts, finely chopped

¾ cup sweet chili sauce

2 tablespoons soy sauce

1 tablespoon rice vinegar

1 teaspoon sesame oil

Fresh cilantro leaves, for garnish

1 head of butter or romaine lettuce, leaves separated

Lime wedges, for serving

Cook the Chicken: In a large skillet over medium heat, heat the vegetable oil. Add the ground chicken and cook until browned and cooked through, about 5-7 minutes.

    Add Aromatics: Once the chicken is cooked, stir in the minced garlic and ginger. Sauté for another 1-2 minutes until fragrant.

      Mix Veggies: Add the diced red bell pepper, chopped mushrooms, green onions, and water chestnuts to the skillet. Stir and cook for 3-4 minutes, allowing the vegetables to soften.

        Create the Sauce: In a small bowl, combine the sweet chili sauce, soy sauce, rice vinegar, and sesame oil. Pour this mixture over the chicken and vegetable mix in the skillet. Stir to coat evenly and let it simmer for 2-3 minutes until heated through.

          Prepare Lettuce Cups: Remove the skillet from the heat. Begin assembling the lettuce wraps by placing a generous spoonful of the chicken mixture into each lettuce leaf.
