Sweet Chili Tofu Stir-Fry

14 oz (400g) firm tofu, drained and pressed

1 tablespoon cornstarch

2 tablespoons vegetable oil

1 red bell pepper, sliced

1 yellow bell pepper, sliced

1 cup snap peas, trimmed

1 small red onion, thinly sliced

3 cloves garlic, minced

1 tablespoon fresh ginger, minced

1/4 cup sweet chili sauce

2 tablespoons soy sauce (low sodium recommended)

1 tablespoon rice vinegar

1 teaspoon sesame oil

Cooked rice or noodles, for serving

Sesame seeds and chopped green onions, for garnish

Instructions
 

Prepare the Tofu: Cut the pressed tofu into cubes. In a bowl, toss the tofu cubes with cornstarch until evenly coated. This will help achieve a crispy texture when cooked.

    Heat the Oil: In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat.

      Cook the Tofu: Add the coated tofu cubes to the skillet. Cook for about 5–7 minutes, turning occasionally, until all sides are golden brown and crispy. Remove the tofu from the skillet and set aside.

        Sauté Vegetables: In the same skillet, add the remaining tablespoon of oil. Add the sliced red and yellow bell peppers, snap peas, and red onion. Stir-fry for about 4–5 minutes, or until the vegetables are tender-crisp.

          Add Aromatics: Stir in the minced garlic and ginger. Cook for an additional 30 seconds until fragrant.

            Combine and Flavor: Return the crispy tofu to the skillet. Pour in the sweet chili sauce, soy sauce, rice vinegar, and sesame oil. Gently toss everything together to coat the tofu and vegetables evenly with the sauce. Allow the mixture to cook for an additional 2 minutes to heat through.

              Serve: Serve the sweet chili tofu stir-fry over cooked rice or noodles. Garnish with sesame seeds and chopped green onions for added flavor and presentation.
