2 ripe bananas, mashed

1/2 cup granulated sugar

1/4 cup brown sugar, packed

1/3 cup melted coconut oil (or vegetable oil)

2 large eggs

1 teaspoon vanilla extract

1 teaspoon baking soda

1/2 teaspoon baking powder

1/4 teaspoon salt

1 1/2 cups all-purpose flour

1/2 cup unsweetened cocoa powder

1/2 cup chocolate chips (semi-sweet or dark, as per preference)

1/4 cup chopped nuts (walnuts or pecans, optional)

Instructions
 

Preheat the oven: Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease it with non-stick cooking spray.

    Mix the wet ingredients: In a large mixing bowl, combine the mashed bananas, granulated sugar, and brown sugar. Stir in the melted coconut oil until well blended. Add the eggs, one at a time, mixing thoroughly after each addition. Incorporate the vanilla extract.

      Combine the dry ingredients: In a separate bowl, whisk together the baking soda, baking powder, salt, flour, and cocoa powder.

        Combine wet and dry mixtures: Gradually add the dry mixture to the wet mixture, stirring gently until just combined. Do not overmix; some lumps are okay.

          Add chocolate and nuts: Fold in the chocolate chips and chopped nuts (if using) until evenly distributed.

            Fill the muffin tin: Divide the batter evenly among the muffin cups, filling each about 2/3 full.

              Bake: Place the muffin tin in the preheated oven and bake for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
