Sweet Corn & Avocado Salad

2 cups fresh sweet corn (about 3-4 ears), kernels removed

1 ripe avocado, diced

1 medium red bell pepper, diced

1/2 cup red onion, finely chopped

1 cup cherry tomatoes, halved

1/4 cup fresh cilantro, chopped

1 jalapeño, seeded and finely chopped (optional for heat)

Juice of 2 limes

3 tablespoons olive oil

Salt and black pepper to taste

Feta cheese (optional, for topping)

Prepare the Corn: If using fresh corn, bring a pot of water to boil and add the corn kernels. Blanch for 2-3 minutes until tender, then drain and cool. If using canned corn, simply drain and rinse.

    Chop the Vegetables: In a large mixing bowl, combine the diced avocado, red bell pepper, red onion, cherry tomatoes, cilantro, and jalapeño.

      Mix The Dressing: In a small bowl, whisk together the lime juice, olive oil, salt, and pepper. Adjust seasoning to taste.

        Combine: Add the cooled corn kernels to the bowl with the chopped vegetables. Pour the dressing over the salad and gently toss to combine, being careful not to mash the avocado.
