2 cups elbow macaroni

1 cup sweet corn (fresh, frozen, or canned)

1 cup diced bell peppers (red, yellow, and green)

1/2 cup diced red onion

1/2 cup cherry tomatoes, halved

1/3 cup fresh cilantro, chopped

1/2 cup mayonnaise

1/4 cup plain Greek yogurt

2 tablespoons apple cider vinegar

1 tablespoon honey

1 teaspoon garlic powder

Cook the Macaroni: In a large pot, bring salted water to a boil. Add the elbow macaroni and cook according to package instructions until al dente. Drain the pasta and rinse under cold water to stop the cooking process. Set aside.
