Sweet Corn & Zucchini Pizza

For the Pizza Dough:

2 cups all-purpose flour

1 packet (2 ¼ tsp) active dry yeast

1 tsp sugar

¾ tsp salt

¾ cup warm water (110°F)

1 tbsp olive oil

For the Pizza Topping:

1 cup fresh sweet corn kernels (or canned)

1 medium zucchini, thinly sliced

1 cup shredded mozzarella cheese

¼ cup grated Parmesan cheese

1 tbsp olive oil

1 tsp garlic powder

½ tsp dried oregano

Salt and pepper to taste

Fresh basil leaves (for garnish)

Instructions
 

Prepare the Dough:

    - In a small bowl, combine warm water, sugar, and yeast. Let it sit for about 5-10 minutes until it becomes frothy.

      - In a large mixing bowl, combine flour and salt. Slowly add the yeast mixture and olive oil; mix until a dough forms.

        - Knead the dough on a floured surface for about 5-7 minutes until it’s smooth and elastic. Place it in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for 1 hour.

          Preheat the Oven:

            - Preheat your oven to 475°F (245°C) and place a pizza stone or baking sheet inside to heat up.

              Prepare the Toppings:

                - In a skillet over medium heat, add olive oil and sauté the zucchini slices for about 3-4 minutes until they begin to soften. Season with salt, pepper, and garlic powder. Set aside.

                  - In a bowl, combine the sweet corn with dried oregano, salt, and pepper.

                    Assemble the Pizza:

                      - Once the dough has risen, roll it out on a floured surface into your desired shape (round or rectangular).

                        - Carefully remove the hot pizza stone or baking sheet from the oven. Place the rolled-out dough on it.

                          - Spread an even layer of shredded mozzarella cheese over the dough. Follow with the sautéed zucchini, then scatter the sweet corn mixture on top. Finish with a sprinkle of grated Parmesan cheese.

                            Bake:

                              - Bake the pizza in the preheated oven for about 12-15 minutes or until the crust is golden brown and the cheese is bubbly and slightly browned.

                                Serve:

                                  - Once baked, remove the pizza from the oven. Allow it to cool for a couple of minutes, then garnish with fresh basil leaves. Slice and enjoy!
