1/4 cup granulated sugar

1 tablespoon baking powder

1/2 teaspoon salt

1 cup buttermilk (or regular milk with 1 tablespoon vinegar mixed in)

1/3 cup unsalted butter, melted

2 large eggs

1 cup sweet corn kernels (fresh or frozen, thawed)

1/2 cup honey (for drizzling or mixing in)

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a muffin tin with paper liners or grease with butter.

    Mix Dry Ingredients: In a large mixing bowl, combine the cornmeal, all-purpose flour, sugar, baking powder, and salt. Whisk until well combined.

      Prepare Wet Ingredients: In another bowl, whisk together the buttermilk, melted butter, and eggs until smooth. If you’re using honey in the mixture rather than as a topping, add it here and mix well.

        Combine Ingredients: Pour the wet ingredients into the dry ingredients. Stir gently with a spatula until just combined. Be careful not to overmix; a few lumps are okay.

          Fold in Corn: Gently fold in the sweet corn kernels until evenly distributed throughout the batter.

            Fill Muffin Cups: Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.

              Bake: Place the muffin tin in the preheated oven and bake for 15-18 minutes, or until the muffins are golden brown and a toothpick inserted into the center comes out clean.
