4 ripe peaches, diced

1 small red onion, finely chopped

1 jalapeño, seeded and minced (adjust for spiciness)

1/2 red bell pepper, diced

1/4 cup fresh cilantro, chopped

Juice of 1 lime

1 tablespoon honey (or maple syrup for a vegan option)

Salt and pepper to taste
