2 medium sweet potatoes, peeled and diced

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) kidney beans, drained and rinsed

1 can (14.5 oz) diced tomatoes (with juice)

1 medium onion, chopped

3 cloves garlic, minced

1 red bell pepper, chopped

2 cups vegetable broth

2 tablespoons olive oil

2 tablespoons chili powder

1 teaspoon cumin

1 teaspoon smoked paprika

½ teaspoon cayenne pepper (adjust to taste)

Salt and pepper to taste

Fresh cilantro, chopped (for garnish)

Avocado slices (for topping)

Greek yogurt or sour cream (optional for topping)

Instructions
 

Prepare the Vegetables: In a large pot, heat the olive oil over medium heat. Add the diced onions and bell pepper. Sauté for about 5 minutes or until the onions are translucent.

    Add Garlic and Spices: Stir in the minced garlic, chili powder, cumin, smoked paprika, cayenne pepper, salt, and pepper. Cook for an additional 1-2 minutes until the spices are fragrant.

      Incorporate Sweet Potatoes: Add the diced sweet potatoes to the pot and stir to coat them with the spices. Cook for about 5 minutes, stirring occasionally.

        Add Beans and Tomatoes: Pour in the black beans, kidney beans, and tomatoes (with their juice) into the pot. Mix well to combine all ingredients.

          Pour in Broth: Add the vegetable broth to the mixture and bring it to a boil. Once boiling, reduce the heat to low, cover the pot, and let it simmer for 25-30 minutes, or until the sweet potatoes are tender.

            Taste and Adjust: Check for seasoning and adjust with more salt, pepper, or spices as needed. If you prefer a spicier chili, add more cayenne pepper.

              Serve: Ladle the chili into bowls. Top with fresh cilantro, avocado slices, and a dollop of Greek yogurt or sour cream if desired.
