Sweet Potato Hatch Chili Hash

2 medium sweet potatoes, peeled and diced into 1/2-inch cubes

1 medium onion, chopped

2-3 cloves garlic, minced

1 can (7 oz) hatch green chiles, drained and chopped (or fresh roasted hatch chiles, if available)

1 red bell pepper, diced

1 green bell pepper, diced

1 tsp smoked paprika

1/2 tsp cumin

Salt and pepper to taste

3 tablespoons olive oil

4 large eggs (optional)

Fresh cilantro or green onions for garnish

Instructions
 

Prepare Sweet Potatoes: In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the diced sweet potatoes, season with salt and pepper, and cook for about 10-15 minutes, stirring occasionally, until they are tender and golden brown. If they stick to the pan, add a little more oil.

    Add Aromatics: Once the sweet potatoes are cooked, push them to the side of the skillet. Add the remaining tablespoon of oil to the empty side, then add the chopped onion and garlic. Sauté for about 3 minutes until the onion becomes translucent.

      Incorporate Peppers and Chiles: Stir in the diced red and green bell peppers, hatch chiles, smoked paprika, and cumin. Cook for another 5 minutes until the peppers are tender. Stir everything together to combine well.
