1 teaspoon ground cumin

1/2 teaspoon garlic powder

1 cup black beans, drained and rinsed

1 cup corn kernels (fresh, frozen, or canned)

1 jalapeño, diced (optional for heat)

1 cup cherry tomatoes, halved

1 cup shredded cheddar cheese (or dairy-free alternative)

1 avocado, sliced

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Salsa (for serving)

Instructions
 

Preheat and Prepare: Begin by preheating your oven to 400°F (200°C). This will help ensure your sweet potatoes cook thoroughly and become crispy.

    Season the Sweet Potatoes: In a large oven-safe skillet, heat the olive oil over medium heat. Add the diced sweet potatoes, smoked paprika, cumin, garlic powder, salt, and pepper. Toss to coat the sweet potatoes evenly with the oil and spices.
