2 medium sweet potatoes, peeled and diced

1 tablespoon olive oil

1 teaspoon smoked paprika

1 teaspoon cumin

Salt and pepper, to taste

1 cup cherry tomatoes, diced

1/2 red onion, finely chopped

1/4 cup fresh cilantro, chopped

1 lime, juiced

1 jalapeño, seeds removed and finely diced (optional for heat)

1 avocado, diced

Feta cheese, crumbled (optional for garnish)

Instructions
 

Prepare the Sweet Potatoes: Preheat your oven to 425°F (220°C). In a bowl, toss the diced sweet potatoes with olive oil, smoked paprika, cumin, salt, and pepper until evenly coated.

    Roast: Spread the seasoned sweet potatoes onto a baking sheet in a single layer. Roast for about 20-25 minutes, turning halfway through, until they are tender and slightly crispy on the edges.

      Make the Salsa: In another mixing bowl, combine the diced cherry tomatoes, red onion, cilantro, lime juice, jalapeño (if using), and a pinch of salt. Stir well to integrate all the flavors. Allow to sit for at least 10 minutes for the flavors to meld.

        Assemble the Scoops: Once the sweet potatoes are roasted, remove them from the oven and let them cool for a few minutes. Take a teaspoon and carefully scoop out a small portion from the center of each sweet potato cube, creating a small “bowl” for the salsa.

          Fill and Garnish: Spoon the fresh salsa into each sweet potato scoop. Top with diced avocado and a sprinkle of feta cheese if desired.

            Serve: Present the Sweet Potato Salsa Scoops on a platter. Enjoy warm or at room temperature, garnished with additional cilantro if desired.
