Sweet Potato & Turkey Enchilada Skillet

1 lb ground turkey

1 large sweet potato, peeled and diced into small cubes

1 medium onion, diced

2 cloves garlic, minced

1 can (15 oz) black beans, rinsed and drained

1 can (10 oz) enchilada sauce (red or green)

1 cup corn kernels (frozen or fresh)

1 teaspoon cumin

1 teaspoon smoked paprika

1 tsp chili powder (adjust to taste)

Salt and pepper to taste

1 cup shredded cheese (cheddar or Mexican blend)

1 tablespoon olive oil

Fresh cilantro, for garnish

Sliced avocado, for serving

Instructions
 

Prepare Sweet Potatoes: Heat the olive oil in a large skillet over medium heat. Add the diced sweet potatoes and sauté for about 8-10 minutes, stirring occasionally, until they are tender and starting to brown. Remove the sweet potatoes from the skillet and set aside.

    Cook Turkey: In the same skillet, add the ground turkey and cook until browned and no longer pink, breaking it up with a spatula, about 5-7 minutes.

      Add Aromatics: Add the diced onion and minced garlic to the turkey in the skillet and sauté until the onion is translucent, about 3-4 minutes.

        Combine Ingredients: Stir in the black beans, corn, sautéed sweet potatoes, enchilada sauce, cumin, smoked paprika, chili powder, salt, and pepper. Mix everything well to combine and simmer for about 5-7 minutes, until heated through.

          Cheese it Up: Sprinkle the shredded cheese over the top of the mixture. Cover the skillet with a lid and let it cook on low heat for an additional 3-5 minutes until the cheese is melted and bubbly.

            Serve: Remove from heat and let cool slightly. Garnish with fresh cilantro and serve with sliced avocado on the side. Enjoy!
