Taco Chicken Zoodle Bowls

Ingredients
  

1 pound boneless, skinless chicken breasts

2 tablespoons olive oil

2 teaspoons taco seasoning (store-bought or homemade)

4 medium zucchinis, spiralized into zoodles

1 cup cherry tomatoes, halved

1 cup corn (frozen or fresh)

1 cup black beans, rinsed and drained

1 small red onion, diced

1 bell pepper, diced (any color)

1 avocado, diced

1 lime, juiced

Fresh cilantro, chopped (for garnish)

Salt and pepper, to taste

Optional toppings: shredded cheese, sour cream, sliced jalapeños

Instructions
 

Prepare the Chicken:

    In a medium bowl, coat the chicken breasts with olive oil and sprinkle with taco seasoning. Toss to ensure they are well-coated.

      Cook the Chicken:

        Heat a large skillet over medium-high heat. Add the seasoned chicken and cook for 5-7 minutes on each side, or until the chicken is cooked through (165°F internal temperature). Once cooked, remove from skillet and let it rest for 5 minutes before slicing.

          Sauté Vegetables:

            In the same skillet, add the diced red onion and bell pepper. Sauté for about 3-4 minutes until they become soft. Add the corn and black beans, stirring to combine. Cook for an additional 2-3 minutes until heated through. Season with salt and pepper to taste.

              Prepare the Zoodles:

                In a separate pan, lightly heat the spiralized zucchini over medium heat for 2-3 minutes, just enough to warm them without losing their crunch. Season with a little salt and pepper.

                  Assemble the Bowls:

                    Begin by adding a generous serving of zoodles to each bowl. Top with the sautéed vegetable mixture, sliced taco chicken, cherry tomatoes, and diced avocado.

                      Add Lime & Garnish:

                        Drizzle the lime juice over the assembled bowls and garnish each bowl with fresh cilantro. If desired, add optional toppings such as shredded cheese, sour cream, or jalapeños.

                          Serve:
