Taco-Stuffed Bell Peppers

4 large bell peppers (any color)

1 pound ground beef (or turkey or chicken)

1 cup cooked brown rice (or quinoa for a healthier option)

1 can (15 oz) black beans, rinsed and drained

1 cup corn (frozen or canned)

1 packet (1 oz) taco seasoning

1 cup salsa (your choice of mild or spicy)

1 cup shredded cheese (cheddar or Mexican blend)

½ cup chopped fresh cilantro (optional)

1 avocado, diced (for topping)

Sour cream (for serving)

Lime wedges (for serving)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Bell Peppers: Slice the tops off the bell peppers and remove the seeds and membranes. Lightly roast them in the oven for about 10 minutes to soften slightly.

      Cook the Filling: In a large skillet over medium heat, cook the ground meat until browned and cooked through. Drain excess fat if necessary.

        Add Ingredients: Stir in the cooked brown rice, black beans, corn, taco seasoning, and salsa. Mix well and let simmer for about 5 minutes, allowing the flavors to meld.

          Stuff the Peppers: Remove the sautéed mixture from heat. Carefully spoon the filling into each bell pepper, pressing down gently to pack them in. Place the stuffed peppers in a baking dish.

            Bake in the Oven: Top each bell pepper with a generous amount of shredded cheese. Cover the dish with foil and bake for 25 minutes. Remove the foil and bake for another 10-15 minutes, or until the peppers are tender and the cheese is bubbly.

              Serve: Allow peppers to cool slightly before garnishing with chopped cilantro, diced avocado, and a dollop of sour cream. Serve with lime wedges on the side.
