Tender Honey Sriracha Meatballs

1 lb ground beef (or ground turkey for a lighter option)

1/2 cup breadcrumbs

1/4 cup grated Parmesan cheese

1/4 cup chopped fresh parsley

1 large egg

2 cloves garlic, minced

1 tsp onion powder

1 tsp salt

1/2 tsp black pepper

For the Honey Sriracha Sauce:

1/2 cup honey

1/4 cup Sriracha sauce (adjust for spiciness)

2 tbsp soy sauce

1 tbsp rice vinegar

1 tsp sesame oil

1 tsp minced ginger (optional)

1 tsp cornstarch mixed with 1 tbsp water (for thickening, optional)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Meatball Mixture: In a large mixing bowl, combine the ground beef, breadcrumbs, Parmesan cheese, parsley, egg, garlic, onion powder, salt, and pepper. Mix until evenly combined, but be careful not to overmix.

      Form the Meatballs: With your hands, form the mixture into 1-inch meatballs, placing them on a parchment-lined baking sheet.

        Bake the Meatballs: Bake the meatballs in the preheated oven for 15-20 minutes or until they are cooked through and golden brown.

          Make the Honey Sriracha Sauce: In a medium saucepan over medium heat, combine honey, Sriracha, soy sauce, rice vinegar, sesame oil, and ginger (if using). Stir to combine and bring to a gentle simmer.

            Thicken the Sauce (optional): If you prefer a thicker sauce, add the cornstarch slurry (the cornstarch mixed with water) to the saucepan and stir until the sauce thickens, about 2-3 minutes. Remove from heat.

              Combine Meatballs and Sauce: Once the meatballs are finished baking, transfer them to the saucepan with the sauce and gently toss until fully coated.
