1 pound pork tenderloin, cut into bite-sized cubes

3 tablespoons Dijon mustard

2 tablespoons pure maple syrup

2 tablespoons olive oil

3 cloves garlic, minced

1 teaspoon fresh rosemary, chopped (or ½ teaspoon dried rosemary)

1 teaspoon smoked paprika

Salt and pepper, to taste

Fresh parsley, chopped for garnish (optional)

Marinate the Pork: In a medium bowl, combine the Dijon mustard, maple syrup, olive oil, minced garlic, rosemary, smoked paprika, salt, and pepper. Mix well to create a marinade.

    Add Pork: Add the pork cubes to the marinade, ensuring they are well-coated. Cover the bowl and refrigerate for at least 30 minutes (or up to 2 hours for more flavor).

      Preheat the Pan: Heat a large skillet over medium-high heat. Add a drizzle of olive oil if desired.

        Cook the Pork Bites: Once the pan is hot, add the marinated pork cubes to the skillet in a single layer. Sear for about 3-4 minutes on one side without moving them, allowing a nice caramelization to form.
