1 lb (450g) boneless, skinless chicken thighs, cut into bite-sized pieces

1 cup fresh pineapple, cubed

1 bell pepper (red or yellow), sliced

1 small red onion, sliced

2 cups broccoli florets

4 cloves garlic, minced

1 tablespoon ginger, grated

1 cup teriyaki sauce (store-bought or homemade)

2 tablespoons vegetable oil (for frying)

1 tablespoon sesame oil

1 teaspoon cornstarch (optional, for thickening)

Cooked rice or noodles, for serving

Sesame seeds and chopped green onions, for garnish

Instructions
 

Prep the Ingredients: Begin by cutting the chicken thighs into bite-sized pieces and chopping the pineapple, bell pepper, red onion, and broccoli into manageable sizes. Set aside.

    Marinate the Chicken: In a bowl, combine the chicken pieces with half of the teriyaki sauce, garlic, and ginger. Let it marinate for about 15-20 minutes while you prep the vegetables.

      Stir Fry the Chicken: In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the marinated chicken pieces and stir-fry for 5-7 minutes, or until the chicken is cooked through and lightly browned.

        Add the Vegetables: Once the chicken is cooked, add the broccoli, bell pepper, and onion to the pan. Stir-fry for another 4-5 minutes, until the vegetables are slightly tender but still crisp.

          Incorporate Pineapple & Sauce: Toss in the pineapple chunks and the remaining teriyaki sauce. If you prefer a thicker sauce, mix the cornstarch with a tablespoon of water, then stir it in at this stage. Cook everything together for an additional 2-3 minutes, allowing the flavors to meld.

            Finish Off: Drizzle the sesame oil over the stir-fry, giving it one last good toss to coat everything evenly.
