1 lb ground turkey

1 cup uncooked jasmine or long-grain white rice

1 can (15 oz) black beans, drained and rinsed

1 cup corn (canned or frozen)

1 medium onion, diced

2 cloves garlic, minced

1 red bell pepper, diced

2 teaspoons chili powder

1 teaspoon cumin

1 teaspoon smoked paprika

1 teaspoon oregano

½ teaspoon salt (adjust to taste)

½ teaspoon black pepper (adjust to taste)

½ cup chicken or vegetable broth

1 ripe avocado, diced

½ cup cherry tomatoes, halved

¼ cup fresh cilantro, chopped

Lime wedges, for serving

Optional toppings: shredded cheese, sour cream, salsa, jalapeños

Instructions
 

Cook the Rice:

    - In a medium saucepan, rinse the jasmine rice under cold water. Then, combine 1 cup of rice with 2 cups of water in the saucepan. Bring it to a boil, reduce the heat, cover, and simmer for about 15 minutes or until the water is absorbed and the rice is fluffy. Remove from heat and let it sit covered for another 5 minutes before fluffing with a fork.

      Prepare the Turkey Mixture:

        - While the rice is cooking, heat a large skillet over medium heat. Add a splash of olive oil and sauté the diced onion and red bell pepper for about 5 minutes until they begin to soften.

          - Stir in the minced garlic and cook for an additional minute until fragrant.

            Brown the Turkey:

              - Add the ground turkey to the skillet, breaking it apart with a spatula. Cook until browned and no longer pink, about 6-8 minutes.

                Season the Meat:

                  - Once the turkey is cooked, sprinkle in the chili powder, cumin, smoked paprika, oregano, salt, and pepper. Stir to combine the spices with the meat. Add the drained black beans and corn, mixing well to incorporate. Pour in the chicken or vegetable broth and allow the mixture to simmer for another 5 minutes, letting the flavors meld.
