Tofu Tacos with Mango Slaw

For the Tofu:

14 oz firm tofu, pressed and drained

2 tablespoons olive oil

2 teaspoons chili powder

1 teaspoon cumin

1 teaspoon garlic powder

Salt and pepper to taste

Juice of 1 lime

For the Mango Slaw:

1 ripe mango, julienned

2 cups green cabbage, thinly sliced

1/2 red bell pepper, julienned

1/4 cup fresh cilantro, chopped

Juice of 1 lime

1 tablespoon honey or agave syrup (optional)

Salt to taste

For Serving:

8 small corn or flour tortillas

Sliced avocado (optional)

Extra lime wedges

Instructions
 

Prepare the Tofu:

    - Cut the pressed tofu into small cubes.

      - In a bowl, combine olive oil, chili powder, cumin, garlic powder, salt, pepper, and lime juice. Mix well to make a marinade.

        - Add the tofu cubes to the marinade, tossing to coat every piece. Let it sit for at least 15 minutes to absorb the flavors.

          Cook the Tofu:

            - Heat a non-stick skillet or frying pan over medium heat.

              - Once hot, add the marinated tofu. Cook for about 5-7 minutes, turning occasionally, until golden and slightly crispy on all sides. Remove from heat and set aside.

                Make the Mango Slaw:

                  - In a large bowl, combine the julienned mango, cabbage, red bell pepper, and chopped cilantro.

                    - Drizzle with lime juice and honey (if using), then sprinkle with salt. Toss gently until everything is well mixed. Adjust seasoning if necessary.

                      Assemble the Tacos:

                        - Warm the tortillas in a dry skillet or microwave until pliable.

                          - For each taco, place a generous spoonful of the cooked tofu on the tortilla, followed by a scoop of mango slaw.

                            - Top with sliced avocado, if desired, and serve with lime wedges on the side.
