Ingredients

1 cup coconut milk (canned or carton)

1/4 cup chia seeds

2 tablespoons maple syrup (or honey, if not vegan)

1 teaspoon vanilla extract

1 ripe mango, diced

1 ripe kiwi, diced

1/2 cup pineapple, diced

1/2 cup granola (your choice)

Fresh mint leaves for garnish (optional)

Instructions

Mix the Chia Pudding: In a mixing bowl, whisk together the coconut milk, chia seeds, maple syrup, and vanilla extract until well combined.

Refrigerate: Cover the bowl and place it in the refrigerator for at least 4 hours or overnight to allow the chia seeds to absorb the liquid and thicken. Stir occasionally to break up any clumps.

Prepare the Fruit: While the chia pudding is setting, prepare your tropical fruits. Dice the mango, kiwi, and pineapple into bite-sized pieces.

Assemble the Parfaits: Once the chia pudding has thickened, scoop a layer into the bottom of a glass or parfait cup. Follow with a layer of granola and then a layer of diced fruits. Repeat the layers until the glasses are filled, finishing with a layer of fruit on top.

Garnish: Optionally, add a few fresh mint leaves on top for an aromatic garnish.

Serve: Enjoy immediately, or cover and refrigerate for a refreshing breakfast or snack later in the day.
