2 ripe avocados, mashed

1 cup fresh corn kernels (or canned, drained)

1 cup black beans, rinsed and drained

1 medium tomato, diced

1/2 red onion, finely chopped

1/4 cup fresh cilantro, chopped

Juice of 1 lime

1 teaspoon ground cumin

Salt and pepper to taste

Optional toppings: sliced jalapeños, vegan cheese, and salsa
