Velvet Roasted Garlic Alfredo

Ingredients
  

1 head of fresh garlic

1 tablespoon olive oil

12 oz fettuccine pasta

2 cups heavy cream

1 cup grated Parmesan cheese

1 tablespoon unsalted butter

1 teaspoon garlic powder

Salt, to taste

Freshly cracked black pepper, to taste

Chopped fresh parsley (for garnish)

Optional: pinch of nutmeg

Instructions
 

Roast the Garlic:

    Preheat your oven to 400°F (200°C). Slice the top off the head of garlic to expose the cloves, drizzle with olive oil, and wrap it in aluminum foil. Roast in the oven for about 30-35 minutes until soft and caramelized. Remove and let cool.

      Cook the Fettuccine:

        In a large pot of salted boiling water, cook the fettuccine according to package directions until al dente. Drain and reserve about 1 cup of pasta water.

          Make the Alfredo Sauce:

            In a saucepan over medium heat, melt the butter. Squeeze the roasted garlic cloves out of their skins into the pan. Using a wooden spoon, mash and mix together until combined with the butter.

              Add Cream & Cheese:

                Slowly pour in the heavy cream, stirring continuously. Bring to a gentle simmer. Add in the grated Parmesan cheese and stir until melted and smooth. Incorporate garlic powder, salt, pepper, and a pinch of nutmeg if desired.

                  Combine Pasta and Sauce:

                    Add the cooked fettuccine to the Alfredo sauce, tossing it gently to coat the pasta. If the sauce is too thick, gradually add reserved pasta water until you reach your desired consistency.

                      Serve:

                        Plate the Velvet Roasted Garlic Alfredo, garnishing with freshly chopped parsley and additional grated Parmesan if desired. Enjoy your rich and creamy dish!
