Ingredients

2 cups fresh watermelon, cubed

1 lb beef sirloin, thinly sliced

3 cups mixed greens (arugula, spinach, and romaine)

1/4 cup red onion, thinly sliced

1/4 cup feta cheese, crumbled

1/4 cup fresh mint leaves, chopped

1/4 cup olive oil

2 tbsp balsamic vinegar

1 tsp garlic powder

1 tsp salt

1 tsp black pepper

Optional: chili flakes for a kick

Instructions

Marinate the Beef: In a bowl, combine the beef slices with olive oil, garlic powder, salt, and black pepper. Let it marinate for at least 15 minutes while you prepare the other ingredients.

Cook the Beef: Heat a skillet over medium-high heat. Add the marinated beef slices and cook for about 3-4 minutes on each side or until well browned and cooked to your liking. Remove from heat and let rest for a few minutes before slicing into strips.

Prepare the Salad Base: In a large mixing bowl, combine the mixed greens, cubed watermelon, red onion slices, and mint leaves.

Make the Dressing: In a small bowl, whisk together balsamic vinegar and any remaining olive oil. If you prefer a spicy kick, add a pinch of chili flakes.

Assemble the Salad Bowl: Place the mixed greens and watermelon mixture in a serving bowl. Top it with the sliced beef and sprinkle with crumbled feta cheese.

Drizzle with Dressing: Pour the balsamic vinaigrette over the salad bowl right before serving, tossing gently to combine without bruising the greens.

Serve: Enjoy the salad immediately while the beef is warm and the salad is crisp.
