4 cups watermelon, cut into 1-inch cubes

8 oz feta cheese, cut into 1-inch cubes (preferably brined for extra flavor)

1 cup fresh mint leaves, roughly chopped

2 tablespoons balsamic glaze

Freshly cracked black pepper, to taste

Prepare the Skewers: If using wooden skewers, soak them in water for at least 20 minutes to prevent burning. This also helps keep the watermelon from drying out when grilling, if you choose to grill your skewers.

    Assemble the Skewers: On each skewer, alternate threading a cube of watermelon, a cube of feta cheese, and a few chopped mint leaves. Repeat this pattern until the skewer is filled, leaving a little space at the ends for easy handling. Aim for about 3-4 watermelon pieces, 3-4 feta pieces, and a few mint leaves per skewer.
