Watermelon Mint Salad Cups

Ingredients
  

4 cups watermelon, diced

1/4 cup fresh mint leaves, finely chopped

1/4 cup feta cheese, crumbled (optional)

1 tablespoon honey

Juice of 1 lime

Salt and black pepper, to taste

1 small cucumber, diced

1/2 red onion, finely diced

3 tablespoons olive oil

Instructions
 

In a large mixing bowl, combine the diced watermelon, cucumber, and red onion.

    In a separate small bowl, whisk together the honey, lime juice, olive oil, salt, and black pepper until well combined.

      Pour the dressing over the watermelon mixture and toss gently to ensure everything is coated evenly.

        Add the chopped mint leaves and feta cheese (if using) into the salad, gently mixing them in without breaking the watermelon cubes.

          Using a melon baller or a spoon, scoop out small portions of the watermelon salad mixture and place them into individual cups or bowls.

            Garnish with additional mint leaves on top for a fresh presentation.

              Serve immediately, or refrigerate for about 30 minutes for a chilled version, as the flavors meld beautifully over time.
