4 cups seedless watermelon, cubed

1/4 cup fresh lime juice (about 2 limes)

2 tablespoons honey or agave syrup (adjust to taste)

1/4 cup fresh mint leaves, finely chopped (optional for garnish)

A pinch of sea salt

Prepare the Watermelon: In a blender or food processor, add the cubed watermelon and blend until smooth. You can strain the mixture through a fine mesh sieve if you prefer a smoother texture.

    Mix the Ingredients: In a large mixing bowl, combine the watermelon puree with fresh lime juice, honey (or agave syrup), a pinch of sea salt, and chopped mint leaves (if using). Stir until well combined. Adjust sweetness by adding more honey or agave if desired.

      Pour into Molds: Carefully pour the watermelon mixture into popsicle molds, filling them about three-quarters full to allow for expansion.

        Insert Sticks: Place the popsicle sticks into the molds, ensuring they are centered and straight.

          Freeze: Transfer the molds to the freezer and allow them to freeze for at least 4-6 hours, or until completely solid.

            Unmold and Serve: To release the pops, run warm water over the outside of the molds for a few seconds. Gently pull on the sticks to remove the popsicles. Serve them immediately, garnishing with additional mint leaves if desired.
