For the Wontons:

1 cup shrimp, peeled and deveined

1 cup ground pork

2 green onions, finely chopped

1 tablespoon ginger, minced

2 cloves garlic, minced

1 tablespoon soy sauce

1 teaspoon sesame oil

Salt and pepper to taste

Wonton wrappers (about 24)

For the Broth:

6 cups chicken or vegetable broth

1 tablespoon oyster sauce

1 tablespoon soy sauce

1 teaspoon ginger, grated

1 teaspoon garlic, minced

2 green onions, sliced (for garnish)

1 cup bok choy, chopped

Fresh cilantro for garnish

1 teaspoon chili oil (optional, for heat)

Instructions
 

Prepare the Filling:

    - In a mixing bowl, combine the shrimp, ground pork, green onions, ginger, garlic, soy sauce, sesame oil, salt, and pepper. Mix until well combined.

      Assemble the Wontons:

        - Place a wonton wrapper on a clean surface. Add about 1 teaspoon of the filling in the center of the wrapper.

          - Moisten the edges of the wrapper with water, then fold the wrapper in half to create a triangle.

            - Press to seal, making sure there’s no air trapped inside. Optionally, bring the two corners of the triangle together and pinch to create a more decorative shape. Repeat until all filling is used.

              Prepare the Broth:

                - In a large pot, heat a little oil over medium heat. Add the ginger and garlic, sautéing until fragrant (about 1 minute).

                  - Pour in the chicken or vegetable broth, oyster sauce, soy sauce, and bring to a gentle simmer.

                    Cook the Wontons:

                      - Once the broth is simmering, carefully add the wontons to the pot. They will sink initially but will rise to the surface when cooked (about 5-7 minutes).

                        - Add the chopped bok choy to the pot during the last 2 minutes of cooking.

                          Serve:

                            - Ladle the wontons and bok choy into bowls. Pour the broth generously over the top.

                              - Garnish with sliced green onions and freshly chopped cilantro. Drizzle with chili oil for an extra kick if desired.
